Easy mid week meal: Bacon spaghetti with pine nuts & parsley

It’s that time of the week. When you’re lacking inspiration, energy & the will to do anything much! Funny how that is! So today in my pursuit to keep up with healthy eating mantra but making it easy I came up with this meal.
You can change up a few ingredients if you so wish to suit your taste buds or to use whatever you have in your pantry.

Ingredients:
– Spaghetti (I used half a packet)
– bacon, cut into pieces (that was in my freezer)
– tin of evaporated milk (to keep it healthyish)
– fresh parsley
– crusher garlic
– green capsicum
– pine nuts
– pepper to taste

Method:
– Boil spaghetti as per packet instructions or until el dente, drain & set aside
– In a saucepan or pot roast the pine nuts until lightly brown shaking the pan so the nuts don’t burn, set aside.
– In the same pan fry the bacon with some crushed garlic
– Add the chopped green capsicum & cool until capsicum slightly softened and bacon browned
– add evaporated milk
– stir in parsley (I use a lot because I love parsley)
– add pepper to taste (you can add salt but I think the bacon makes it salty already)
Top with roasted pine nuts & more parsley
Can be served with side salad.

Emotional health

Insight on being emotionally happy & healthy:

We are emotional beings and paying attention to our emotions is something we should do regularly, otherwise, these emotions accumulate and may cause great damage in our bodies and our minds. Most of us hold back our emotions for very long periods of time and one day those emotions which have been bottled up explode uncontrollably and unexpectedly.. at the grocery store, in your car listening to the radio, in the middle of the night, anywhere and anytime. Blocked emotions end up festering and having much more impact than they should when released. This overwhelming outburst can be surprising, overpowering and somewhat frightening; the flow of feelings unleashed has accumulated for a long period of time which can make the intensity of the release disproportionate to the underlying situation. Should you have a similar experience do not fight it, instead allow the feelings to flow freely immediately or as soon as you can find a secure place where you can let yourself go privately and comfortably. Give your emotional system the love, time and attention it needs and deserves. In order to keep your physical and emotional lives healthy and in balance make time in your busy life to process your emotions regularly through meditation, writing or talking to a trusted friend and always remember that emotions are created by thoughts, keep your thoughts happy and positive and you will have healthy and peaceful emotions.

Fad diets vs healthy eating

Hello lovelies… I haven’t posted for a while. I’ve been on the “trying to be healthy” bandwagon all while looking after Lil B & trying my best to entertain him. His at that stage where everything intrigues him & so curious… But that’s for another post 🙂

This healthy lifestyle is no easy task, especially when there’s so much temptation around you! But that’s just it. Temptation or not. I would never deprive myself of luxuries as life is too short for that crap! My motto to healthy eating is: “Be Calm & Have Everything In Moderation”

I find if I follow this ‘rule’ my tummy is satisfied as well as my sanity. I try, where possible, to choose the healthiest option but we don’t live in a perfect world.

I’d much rather eat everything (in moderation, that is) than be on a fad diet that everyone raves about for the first few months of their existence. Don’t get me wrong, some people are successful on these fad diets but it NEVER lasts! Because again each of our lifestyles are different & we all like different things.

Conclusion: Find what works for you, fit it into your lifestyle. Be fit,energetic & healthy!! 🙂
